Grilled Prawns with Cilantro Sauce

Prawns – approx. 10 to 12 prawns, rock salt 5 gr, jalapeño 100 g, garlic 6 g, white onion 15 g, cilantro  45g, lime juice – 4 limes juice, salt 4 g, rice vinegar,  10 g, olive oil 10 g, artichokes – 4 hearts, asparagus 8 to 10 pieces and Romain lettuce – 2 pieces.

For the lettuce's vinaigrette: garlic 5 g, white onion 15 g, sweet pepper 150 g, olive oil 20 g sesame seeds 15 g, salt  4 g.



In a blender mix all the ingredients for the cilantro sauce. Then proceed to marinate the prawns with it, and leave them in the fridge for 1 hour before putting them on the grill. In the meantime add rock salt and olive oil to all vegetables before going to the grill.

To achieve a crispy and browned exterior and a tender, juicy interior, start your Keveri H1 in Fast Grill Mode, reaching a temperature of around 630°F, and add the vegetables. Leave the lettuce for about 3 minutes, the asparagus for around 5 minutes, and the artichoke hearts for approximately 8 minutes. Then, wait for the temperature to rise to 650°F and add the prawns (you can add more cilantro sauce if desired), cook them for 3 minutes on each side.
