Chiken al Pastor with Salsa Verde

INGREDIENTS 

One whole chicken, 5 grams of salt, 50g of chile guajillo,  50g of chile ancho, 130g of white onion, 25g of apple vinegar, 480g of tomato, 150g of pineapple, 10g of garlic,15g of salt, 20g of canola oil, water, 300g tomatillo verde, 1 piece of avocado, 20g cilantro, 60g white onion, 5g chile serrano tatemao,10g garlic, 5g salt 

DIRECTIONS

AL PASTOR SAUCE

Consider the time to marinate the chicken.

Cut the tomato and white onion into quarters and in a pan, heat the canola oil. Add garlic and onion to the pan and cook until slightly golden. Once they have turned golden, add the Guajillo chile and Ancho chile until slightly golden. Finally, add the apple cider vinegar, water, and tomatoes until they are completely soft and mashed. Once it is ready, put everything in a blender and add the salt and pineapple. Mix until all the ingredients are incorporated. Once the sauce is cold or at room temperature, marinate the chicken (both sides).

We recommend marinating for at least 4 hours, ideally overnight in the fridge.

CHICKEN 

To smoke, light up your Keveri H1 in the Low & Slow Mode and wait for it to reach the perfect temperature between 210F-270F. Let it smoke for at least 2 hours. Remove it, and add more charcoal to raise the temperature between 320F-390F in Classic Mode, to mark the chicken and sear the pineapples. Approximately 3 minutes per side or until golden brown.

SALSA VERDE

When the H1 reaches Classic Mode, add the onion, tomatillo verde, serrano chile, and garlic for approximately 5 minutes. Remove and put all the ingredients in a blender, including avocado, cilantro, and salt.

Corn tortillas, add the pastor chicken, salsa verde, and roasted pineapple.
