PREPARATION:

The day before

 Step 1:

With a paper towel, pat dry the wings. In a bowl, set the wings, pour the baking powder and salt, then toss it several times.

Step 2:

Place the wings in a rack, and let them rest overnight in the fridge.

The Next day:

Step 1:

Fire up the H1 in Classic Grill Mode at 350°F according to the manual instructions or the Masterclass video.

Step 2:

Place the wings in the H1 in the middle rack position, for 20 minutes or until brown, and then flip it and grill them for 20 more minutes.

Step 3:

While the wings are in the H1, prepare the ranch sauce: In a blender set the buttermilk, sour cream, mustard, coriander, black ground pepper, and salt. Mix for a few minutes until you have a smooth sauce.

Step 4:

Divide the wings into two bowls, in one add some red hot sauce, in the other add some BBQ sauce and toss it.

Serve with the ranch sauce.

Cook's Notes:

Chicken wings are excellent for experimenting with new flavors, they are a blank canvas. I encourage you to try making them with fresh herbs, some garam masala, lemon pepper, etc the possibilities are infinite!
