Continuing with our Thanksgiving recipe series, this is the turn of the Gravy. The gravy is the unsung hero of any holiday meal, elevating dishes with its rich, savory flavor.

A well-made gravy brings everything together, you can drizzle it over the turkey, mashed potatoes, stuffing, or cornbread. Gravy will highlight your feast.

This recipe will guide you through greeting a gravy with a little Keveri twist.

Let’s fire up the H1!

INGREDIENTS:

Serves 6+

1 Turkey neck
1 Tablespoon of oil
2 Onions
1 Carrot
1 Celery stick
50 oz of chicken broth
50 g of butter
50 g All purpose flour
Dried mushrooms
Salt
Black ground pepper
Bay leaves
Thyme

SUPPLIES:

2-3 lb of lump charcoal
High-Temperature Gloves


INSTRUCTIONS:

 Step 1:

Fire up the H1 in Classic Grill Mode at 320°F according to the manual instructions or the Masterclass video.

Step 2:

Take the turkey neck, carrots, onions, and celery sticks and chopped in medium-sized pieces.

Step 3:

In a skillet or pot, add the turkey neck and vegetables, add a little oil, and sauté for a few minutes in the bottom rack position

Step 4:

Add the chicken broth, thyme, bay leaves, dry mushrooms, salt, and pepper to the pot. Mix and let it cook for 1 hour approximately until it reduces.

Step 5:

Once the mix has been reduced, strain the ingredients. Preserve the broth.

Step 6:

In a pot, set the butter to melt and add the flour. Whisk constantly until it´s all together. Add the broth slowly, and continue whisking until you have incorporated all.

Step 7:

Let it cook until it comes to a boil. Then continue cooking as far as it reduces its volume.

 

Cook's Notes:

We made a little twist from the more traditional gravy recipe by adding the dry mushroom. I encourage you to find your personal touch to give to this recipe.
