Elevate your next meal with this perfectly grilled Lamb Rack and Roasted Potatoes, a dish that blends elegance with rustic comfort. Using the Keveri H1 in Baker Mode, you'll achieve perfectly seared lamb and golden, crispy potatoes with minimal effort. The lamb rack, seasoned with a fragrant mix of fresh rosemary and garlic, is cooked to tender perfection, while the potatoes, drizzled with olive oil and dotted with butter, roast to a delectable crisp. Ingredients
Serves 2
1 lb lamb rack
1 lb white potatoes
Fresh rosemary
Fresh garlic
Salt
Ground black pepper
Olive oil
Butter

Cast Iron Fajita Pan
Cutting Board
Mortar & pestle
Preparation
Step 1:
Light up the Keveri H1 in Baker Grill Mode at 500°F.
Step 2:
Cut the potatoes in thin slices. Season with salt and pepper. Set the potatoes on a cast iron, add a drizzle of olive oil and small pieces of butter. Cover with foil and put into the H1 in the top rack position for about 30 minutes or until fully cooked.
Step 3:
Smash the garlic with a knife. Add it, without skin, to a mortar with the rosemary leaves. Ground everything and add olive oil to incorporate.
Step 4:
With a sharp knife, score the fatty side of the lamb rack.
Step 5:
Season the lamb rack on both sides with the mix of garlic, rosemary and olive oil. Leave it to rest for a few minutes.
Step 6:
Set the lamb rack in the H1 in the bottom rack for about 7 minutes per side.
Step 7:
Cut the lamb rack in between ribs to create small chops. Serve on a plate with the baked potatoes and add more of the rosemary garlic seasoning to taste.
Cook's Notes:
Don´t be afraid to use the Baker Mode more than just for baking, this lamb racks were perfectly cooked. You can also cook this great dish in the Classic Mode or Fast Grill Mode, you just need to adjust the times.
