There’s nothing like a one-pot meal to bring everyone together—and with the Keveri H1, this chicken orzo becomes even more flavorful. Cooked in Classic mode in the H1, the tender chicken, creamy orzo, and fresh herbs meld beautifully into a rich, comforting dish with just a hint of wood-fired depth. It’s the kind of recipe that feels special but couldn’t be easier to make—perfect for busy weeknights or laid-back weekends. Minimal cleanup, maximum flavor.

Ingredients

Serves 4+

4 chicken drumsticks 
1 cup orzo 
1 white onion 
3 garlic cloves 
1 cup cherry tomatoes 
2 cups chicken or vegetable broth
olive oil
black pepper
salt
fresh thyme (a handful) 
fresh oregano(a handful)
fresh rosemary (a handful)
parmesan cheese
1 cup of white wine

 

Supplies:

2-3 lb of lump charcoal

2 cast-iron skillets

Preparation

Step 1:

Fire up the Keveri H1 in Classic mode at 356°F, following the instructions in the owner´s manual or the masterclass video.

Step 2: 

In a cast iron skillet, place the cherry tomatoes along with fresh rosemary, thyme, and oregano. Add a generous amount of olive oil. Place on the top rack position to confit for about 20 minutes.

Step 3: 

Finely dice the onion and garlic. Take a large skillet and add the onion, garlic, salt, pepper, and olive oil. Place it on the middle rack of the H1.

Step 4:

Season the chicken drumsticks with salt and pepper. Place them directly on the bottom rack of the H1 and cook for 10 minutes on each side.

Step 5:

After 20 minutes, remove the chicken from the rack and place it in the large skillet. Add white wine and let it reduce for 5 minutes. Remove the cherry tomato skillet and set it aside.

Step 6:

Once the white wine has reduced, add the orzo, 2 cups of broth, and fresh herbs. Place the skillet back on the middle rack for approximately 10 minutes.

Step 7:

After the time has passed and the liquid has been absorbed, add the confit cherry tomatoes and a bit of Parmesan cheese. Enjoy!
