Cauliflower is like a blank canvas for your culinary creativity. If you are looking for a different side dish or to raise a special dinner, this recipe brings you a smoky and spicy flavor to add a simple cauliflower. 

Fire up the H1 and get ready for a cauliflower twist!

Serves 5+

1 Cauliflower
Olive oil
Grounded Coffee
Paprika
Ground black pepper
Salt
Garlic cloves
Sour cream
Lemon
Chives

SUPPLIES:

2-3 lb of charcoal
High-Temperature Gloves
Keveri Cutting Board

 

PREPARATION:

Step 1:

Fire up the H1 in Low & Slow Grill Mode at 250-270°F  according to the manual instructions or the Masterclass video. 

Wrap the "Smoke Controller" with aluminum paper, and put it in the middle rack position. This will allow it to have a complete direct zone and also a complete indirect zone.

Step 2: 

Prepare the rub for the cauliflower, place all the spices in a bowl: paprika, black pepper, salt, and coffee. Add some olive oil to make a “paste” with those ingredients. With your hands, spread this paste all over the cauliflower.

Set the seasoned cauliflower inside the H1 on the bottom rack position. 

Cook for an hour or until it's "al dente". It has to feel slightly softer, not mushy.

Step 3: 

Mix the sour cream with two tablespoons of olive oil, the juice of 1-2 lemons, salt, pepper, 2 grated garlic cloves, and chopped chives. Spread this sauce on a plate.

Step 4: 

Remove the cauliflower from the H1, cut it into big pieces, and set it on a plate with the sour cream.

 

Cook's Notes:

Feel free to try new alternatives of rub for the cauliflower, you can try a mix with zaatar, sumac, and lemon zest. Another dip alternative could be replacing the sour cream with Greek yogurt.
