This one's a classic – Which makes it a great way to get to know the Keveri H1's Classic Mode. Roast Chicken is all about comfort. We enjoy sharing this recipe with friends and loved ones. It also makes a great meal-prep dish to be enjoyed the day of, as well as used for other meals in the days ahead.
To ensure we had a classic, we asked the Keveri Team about their favorite versions of this recipe. While recipes were shared, so were stories and memories. The Classic Roast Chicken recipe is not just a dish but an accumulation of the comfort one receives from cooking a dish in this way. Whether in South America or the States, there is a warmth that can be experienced in a countryside house with a wood-fired oven. Roasting a chicken with an open flame, in a wood-fired oven is special, it brings a nostalgia to the dish. It reminds us of the most basic yet flavorful aspect of cooking, comfort.
This recipe is simple, it doesn’t require much work and is perfect for any occasion. An added feature of this recipe is that after the chicken is ready, the Keveri H1 will be at a great temperature to cook a few more dishes, which unlocks the ability to prepare and plan additional meals for the week ahead. - Whole Organic Chicken
- Salt and Pepper
- 2 Onions
- 4 Carrots
- 1 branch of Celery
- 1 Garlic
- 1 Lemon
- 1 Fennel
- 1 cup of White Wine
- Extra Virgin Olive Oil
- 2-3lb Natural Briquettes or Lump Charcoal
- 1 Wood Chunk. Apple or Cherry.
- Roasting Pan
- High Heat Gloves
- Meat Thermometer
Set Up - Classic Mode (350 - 390°F). First start by lighting your Keveri H1 in the Classic Mode at 350°F-390°F using one chunk of wood, we recommend cherry or apple.
Food Prep & Middle Rack. Ruffly chop your desired veggies, we recommend two onions, a small branch of celery, garlic, carrots, half a lemon, but feel free to use what you have. Here is where your creativity plays a major role. Aromatics such as bay leaves, thyme, and rosemary, are all welcomed here.
Using a small bowl, put fine chopped fennel fronds, garlic, fresh ground pepper, salt and olive oil. Use this sauce to rub the exterior and cavity of the chicken.
Place the chicken inside the roasting pan, add a cup of white wine, and now it’s ready to put it inside the Keveri H1 (or you can leave it in the fridge and keep it ready for when you are ready). We recommend using the middle rack position.
Timer, 45 minutes + 5 minutes. 45 minutes cook time, or when the poultry reaches 165° degrees (we recommend using a meat thermometer for this.)
If you want to develop a more intense crust by basting the chicken with the liquids from the pan and letting it cook for 5 more minutes.
While roasting your chicken, take advantage of the low rack in your Keveri H1, grill veggies, and cook side dishes simultaneously. You can grill and roast at the same time, allowing more variety in side dishes and meal planning.
