Smoky Cauliflower with Peanut and Herb Yogurt Sauce

It's spring, and Chef Santiago Gomez shows a simple yet delicious way to enjoy cauliflower. Using just a few ingredients and the intensity of the H1 fire, which highlights the vegetable's natural taste, enhanced by a touch of peanut butter and a herbed Greek yogurt sauce. Quick, easy, and tasty, this dish is perfect for anyone looking to enjoy good food without the fuss.The result, is a great meatless main dish, a smoky veggie side, or an appetizer. It's a simple way to enjoy the fresh flavors of spring, showing how easily fire can elevate home cooking.

 

Ingredients

Serves 2+

1 whole cauliflower
150g peanut butter
5g salt (divided, or to taste)
300g plain Greek yogurt
3g tarragon leaves
4g garlic
2g salt (or to taste)
3g chile serrano
Juice of 1/2 yellow lime

 

Supplies:

2-3 lb natural briquettes 

High-Temperature Gloves

A large size skillet of The Sizzling Pack

Pastry brush

 

Preparation

Step 1:

Low & Slow Mode (210-270°F). Light your Keveri H1 in the Low & Slow Mode  Mode and wait for it to reach approximately 220°F to 250°F.

 

Step 2: 

Put the salted cauliflower in a the large skillet or roasting pan. Roast it in the on the top position Grill Rack for 30 minutes.

 

Step 3: 

While the cauliflower is roasting, prepare the sauce. In a blender, combine the Greek yogurt, tarragon leaves, garlic, 2g of salt (or to taste), chile serrano, and the juice of 1/2 yellow lime. Blend until smooth and creamy. Taste and adjust seasoning if necessary.

 

Step 4:

After the cauliflower has roasted for 30 minutes, remove it from the Keveri H1.
Using a pastry brush, spread the peanut butter evenly over the entire surface of the cauliflower.

 

Step 5:

Return the cauliflower to the H1, this time placing it on the bottom rack.
Roast for an additional 10 minutes or until the peanut butter is slightly caramelized and the cauliflower is tender.

 

Step 6:

Remove the cauliflower from the oven and let it cool slightly. Cut into florets or slices and drizzle with the herbed Greek yogurt sauce.

Optionally, garnish with additional tarragon leaves or a sprinkle of chile flakes for extra heat.

 

Step 7:

Serve warm as a meatless main course or a unique side dish that pairs the nuttiness of peanut butter with the tangy freshness of the herbed yogurt sauce.
