There's something satisfying about pulling a golden, smoky roast out of the H Mini knowing the whole meal — meat, veggies, and potatoes — cooked together in one pan. This recipe is perfect for putting together a complete barbecue dinner in under an hour.

The roast cooks in Classic Mode inside a roaster pan, set over a bed of seasoned vegetables, colored potatoes, and stock, so the meat's juices drip down into the side dish while it picks up a delicate touch of wood smoke along the way.

INGREDIENTS

Serves 4 to 6 people

  • New York roast (whole piece)
  • Salt and black pepper
  • Stock
  • Onion
  • Bell pepper
  • Carrot
  • Green onions
  • Garlic (2 cloves)
  • Colored potatoes

PREPARATION

Step 1: Light the Oven in Classic Mode

Light your Keveri H Mini in Classic Mode to reach a temperature of around 380°F (it takes approximately 10 to 15 minutes to light).

Step 2: Veggie Base and Stock

In a roaster pan, arrange the onion, bell pepper, carrot, green onions, 2 garlic cloves, and colored potatoes. Season the base with salt and black pepper, then pour in the stock.

Step 3: Seasoning and Placing in the Oven

Season the roast with salt and black pepper. Place the meat directly over the bed of vegetables in the pan, then place everything into the H Mini along with a chunk of wood over the charcoal.

Step 4: Cooking and Temperature Control

Cook for about 40 minutes, monitoring the meat until it reaches an internal temperature of 120°F.

Step 5: Ready to Serve!

Remove the roaster pan from the oven and let the roast rest for a few minutes before slicing. Serve it alongside the roasted veggies and potatoes, spooning the pan juices over the top for that last hit of smoky flavor.

Chef's Notes

Cooking the roast directly over the tray of vegetables lets all the rich juices from the meat drip down as it cooks, turning a simple side into something worth savoring.
